I've found it isn't so much "how much is more than enough" on enchantments you want, but rather, "how much is too much" on enchantments you don't. For example, I have a policy of junking anything with more than two magic resistance, no matter what else is on it. 3 magic resistance, 10 willpower? Junk it. The only way to maintain your sanity while enchanting is to set and stick to some requirements, since it is a random process.

It depends on the specific spell and the real question is how much art you've been testing against.

Enchanting takes too much time from game time.

I wish it wasn't so boring and random.

Clear guidelines for 'how many' enchants on 'which' item:
lvl 40 item can take 6 to 7 enchants, lvl 45 7 to 8 enchants etc

Spending all this time to get 100+ enchants lead people into hiding and it's only natural since losing everything is a matter of seconds.

5 resistance will suprisingly bounce a lot of spells of off you. Sadly, they always seem to be helpful spells. It doesn't matter -as much- as a sorc, because it's not very often that somebody is like...casting heal on you in the middle of a fight.

And, IMO 25 reflex is seriously a waste of enchantment slots. And I play a deep-elf (BoG).

This is not true. My current kit includes like some level 30 cloth that I put 10 enchants on.

Hiding, I'm not too fond of the term but it's far more difficult to get the right enchants, than it is to take someone's kit from them. This is a concept that Dulrik does not understand. It is not fun to have to spend several hours enchanting equipment just to be on par for PK. It can take several hours to enchant a suit adequate enough to protect from spells, but only takes seconds to lose it.
