Having played a griffon sorc to some extent, I'll agree: Art is much, much better than mana. It's what you need to get past your opponent's spell defenses.

Griffon sorcs do benefit from a mana train or three. Besides the obvious advantages for a naturally low-mana caster, what scrolls you can scribe depends on your total mana. That's a problem for griffons since they can't wear as much +mana gear as other races.

However, you'll find other stats so valuable, that you definitely won't want to go overboard on mana. I recommend waiting until at least Expert (level 31) to start training mana, if you train it at all. By then, you'll have a much better idea of the game, and fitting in any sensible number of mana trains won't be a problem.
