Is there ever a chance that when you are enchanting a weapon you can add something more than simply making it hit better and do more damage?

Bastards. Fine, on a "brilliant" enchant it will make the weapon glow, and when it nears the max point it will hum (assuming it doesn't start that way).

If you really want to be technical, you can also explode and fade them as well.

Enchanting weapons:

From what I have found playing Fepel, which may be wrong.
---------------------------------------------------------------------
Regular enchant: Glows blue, you give +1 to hit and damage.

Critical enchant: Glows brilliantly blue. Glowing weapon and +2 to hit and damage

Slight = +1
Moderate = +2, +3
Greater = +4, +5

If one attribute is at maximum and the other is not, you can continue to enchant only improving one of the attributes. Some weapons cannot handle a +5 and will fade/vaporize. When a weapon hits +5 for both accuracy and damage the weapon will hum. Some weapons hum naturally, an IMM designed them that way, but may not necessarily be fully enchanted. Weapons also have a chance of fading/vaporizing or glowing when it changes quality rating. For example if a dagger that was average quality goes to above average quailty because of the level rating. When this change occurs there is a chance of glowing/fading/vaporizing. The chance is based on the material of the weapon. If you try to enchant it beyond +5 or a critical enchant would bring it above +5 it will fade/vaporize depending if the object makes it's save.

Weapons can have more than +5/+5. I've had weapons with +7/+7 and I think Vaodan even got a +8/+8 for me once.

+8/+4 is crap, especially on a battlespear since there are other deadlier spear subtypes. The +8/+8 or even the +7/+7 are impressive, imagine what could happen if a weapon begun with a +4 dmg and was enchanted 6-7 times.

PS: One handed tanso steel khopesh with +2 dex +6 dmg +6 to-hit is a great way to plvl a warrior :D
