Previous to the code update, when purchasing it took from the lowest coins then moved upward, that seems to have been reversed and is rather annoying.

I don't think that is the case. But if you have money in various containers, it's semi-random what container the code will start pulling the money from to start with. Were you keeping all your big coins in a different container? That would explain it.

No I wasn't, I pulled all my coins from my container, also it seems rogue NPCs in the gypsy camp are able to steal through the container.

You don't have enough copper to pay, so it breaks down a silver piece and then gives you back the remaining copper in change. After the first transaction, it is never breaking down your platinum - you still have 9 platinum at the end of the log you posted.
