I was wanting to know if I use a two-handed weapon would I still be able to parry?

Yes.

You should keep in mind that there are some weapons that can't parry or be parried, it depends on the weapon type not whether it is one or two handed.

More specifically, while you can parry with (most) two handed weapons, your chances of parrying depend on your speed and accuracy: two things that two handed weapons are generally poor at. So you will parry, just not nearly as much.
