So I eat a Herb for sanc, and get blindness to.

Sanctuary wears off before blindness does.... This is just lame.

That is why there is a specific herb for blindness that is the same level as that particular herb.

That is also why you should enchant your gear. That blindness is very easy to save against.

Even with well enchanted suits, I've had those herbs sneak a blindness through every so often.

Sanc doesn't last long, blindness does. Of course sanc will drop before blindness, always keep the cure blind herbs or some kind of cure blindness potion/pill with you when using those herbs.
