I thought that MP only had to do with reducing magic damage... this implies that it has to do with actual dodging. Could somebody set me straight about MP and what it does?

That's the beauty. We're not 100% sure of it's abilities. I do however believe that I can tell you, that it does not directly affect how much you dodge. But then again, MP increases armor quality and therefore increases the chance of your opponent missing. MP doesn't just decrease magical dmg, no no no. On relevant armor pieces it also helps armor quality and therefore reduces physical dmg.

Not really sure, honestly. But I will say that getting faerie fired seems to increase melee damage taken, in addition to increasing spell damage taken.

MP has two purposes. First, on singular pieces of armor MP will increase the amount of physical protection that armor piece offers, therefore reducing the amount of physical damage one takes from physical weapons on the location that particular piece of armor covers.

Secondly, MP has a cumulative blanket effect, that reduces damage from offensive spells. All the MP on all the armor, trinkets, symbols, and shields you are currectly wearing adds together to shield you from magical damage, thereby reducing the damage you take from spells.

faerie fire has two effects, that is probably why it is confusing you.

It has an anti-shield and an anti-armor spell all rolled into one.

Sometimes spell affects make unique contributions to your combat stats or abilities completely apart from the more generic modifiers that you can see in the affects command. For example, true sight is more than the sum of its parts. This might be the case for faerie fire as well with regard to dodging, although I don't recall for certain.
