Aside from the obvious warlock spells, what attacks does resist elements protect against? Meaning, shocking bite, flaming bite, poison gas, acidic bite, acid in general, stuff like that.

Not acid, nor gas blast.

RE helps you resist attacks based on fire/water/lightning. That's freezing/flaming/shocking bites. Also several spells that are not cast by warlocks can be rather useless with RE. That includes flamestrike, call lightning, even hellfire(a part of it at least).
