I don't really see a minotaur as a warlock, much less a priest. They don't seem to be the arcane sort to want to try such things. Hellion, definitely so. They would make excellent warriors for the gods. Paladin, I am not so sure. At least, not with the current climate in game. That would go for hellions as well. There would need to be a build up of IC progress for Minotaurs to trust another god again. I, personally, would NEVER expect to see a Minotaur as a member of the faith of Sargas due to their history. But, I suppose anything is possible with 2-400 years of hard fought RP.

If you read help minotaur and you look at what they are supposed to be like it will be clear to everyone why they get the classes they get. They shouldn't be priests or paladins or hellions. They don't like the gods. They believe the gods cursed and betrayed them.

Giants should get to be paladins. I'd like to see a giant paladin vs a mino hellion. Not code-wise, just fluff.
