When a sleep spell was cast on me recently, I was awaken by an attack. Not sure by whom but I changed to defensive stance in my sleep and all I saw was being woken and 'You parried the attack' or whatever, of course I immediately fled. This could be just a 'feature' of the sleep spell, perhaps any hostile action taken 'wakes' you before it happens. Maybe it's different if you go to sleep by your own will.
And yes you can change 'stances' while asleep.. I imagine going into a defensive sleeping position, visually, would have shown my character curling up in the fetal position sucking his thumb or something.. Whatever it was I give it credit for making it out of there alive.
On another note I've had a bard and a shaman backstab my rogue while he was sleeping, taking me down to 30% with just the one. Maybe could have outright killed me if they weren't stunning, who knows.
