Or maybe the rogue is SO good at taijutsu, that even if he's knocked out he can fight with muscle memory alone! Also, when he's drunk, he's even more powerful!

I had one a couple weeks ago where my rogue was backstabbed. She fled the room and the second backstab finished her off alone in the next room.

Not if it was immediate. Last I knew, you couldn't backstab someone again with a racing pulse unless they were blind.
